La Collina, Lambrusco Dell'Emilla Quaresimo 2016
Dark ruby black. Black cherries, tiny fizz tank bubbles. Rocky rocks, touch of residual sugar pulls it out of a nose dive. Carbonic and black fruit references a cru Beaujolais. You know it's messed when I consider this at all. Wall of dark minerals offset with pip of sweet.
No sugar or yeast added to the xarmant process. Instead its dosed with its own frozen must. Cool. 😎
100% Lambrusco. I think organic Grapes. Harvested by hand. But i don't know where I get this from. Hmm.
